In her new book, Slim Down Now, Cynthia Sass offers a complete guide to harnessing the power of pulses to achieve weight-loss success. Sass introduces a unique class of protein-rich carbs—including lentils, beans, and chickpeas—called “pulses” that satisfy your hunger while simultaneously whittling away belly fat. The benefits of these superfoods are tremendous. Pulses help dieters actually boost calorie and fat-burning, prevent snack attacks, and enjoy lasting energy. Additionally, pulses are gluten-free and affordable.
Enjoy one of Sass’s delicious recipes that incorporates these healthy, vitalizing foods.
Lean protein: 1/2 cup organic egg whites or 1 whole organic egg and 3 whites, whisked
Vegetable: 1/4 cup each minced white onion, grape tomatoes sliced in half (about 8), sliced white button mushrooms, and minced green bell pepper
Plant-based fat: 1/4 medium avocado
Seasoning suggestion: 1 teaspoon chopped cilantro; 1 teaspoon fresh-squeezed lime juice; 1 small jalapeño, minced; 1/16 teaspoon black pepper
In a bowl, combine the avocado, cilantro, lime juice, minced jalapeño, and black pepper and mash the mixture lightly to make guacamole; chill. Spray a small sauté pan with olive oil-based nonstick spray and place it over low heat. Sauté the onion, tomato, mushrooms, and bell pepper until the onion is translucent and the bell pepper is tender. Remove the veggies from the pan and set them aside. Add the eggs to the pan and allow them to just set, then carefully fold one side over onto the other. Slide the omelet onto a plate, top it with the sautéed veggies, garnish with the guacamole, and serve.
