Mexi Omelet

Lean protein: 1/2 cup organic egg whites or 1 whole organic egg and 3 whites, whisked
Vegetable: 1/4 cup each minced white onion, grape tomatoes sliced in half (about 8), sliced white button mushrooms, and minced green bell pepper
Plant-based fat: 1/4 medium avocado
Seasoning suggestion: 1 teaspoon chopped cilantro; 1 teaspoon fresh-squeezed lime juice; 1 small jalapeño, minced; 1/16 teaspoon black pepper

In a bowl, combine the avocado, cilantro, lime juice, minced jalapeño, and black pepper and mash the mixture lightly to make guacamole; chill. Spray a small sauté pan with olive oil-based nonstick spray and place it over low heat. Sauté the onion, tomato, mushrooms, and bell pepper until the onion is translucent and the bell pepper is tender. Remove the veggies from the pan and set them aside. Add the eggs to the pan and allow them to just set, then carefully fold one side over onto the other. Slide the omelet onto a plate, top it with the sautéed veggies, garnish with the guacamole, and serve.

Whole grain: serve with 1/2 cup oven-roasted corn or  2 taco-sized organic whole corn tortillas or
Starchy vegetable: serve with 1/2 cup cubed oven-baked, skin-on red potatoes or
Fruit: serve with 1 cup fresh fruit or
Pulse: serve with 1/2 cup black beans
